Some resorts have some hotel rooms held for guests that need to quarantine as a result of testing positive for COVID-19 whilst in France. On peak dates it is likely your accommodation will be fully booked for the following week so the residence may require guests to move to a different hotel or apartment if they test positive at the end of their stay. We strongly advise you double check with your travel insurance before you travel that it covers you as they would be the ones that need to authorise payment for additional accommodation and they should be sourcing the accommodation for you.
